WHY DID YOU START A FOOD TRUCK?
I wanted to venture out and try working for myself. I love cooking, that is my passion, and I love gyros. I grew up cooking Greek food with my family restaurant.
WHAT'S ON YOUR FOOD TRUCK MENU? WHY DID YOU CHOOSE THIS CUISINE?
Some of the food was inspired from the restaurant. We brought to the truck your traditional beef and lamb gyro, but then we did a spinoff, a roasted lamb gyro, which is really good. Then we brought a fan favorite, which is the pork belly gyro. People love that one. Then the ultimate worldwide famous dish is the gyro fries, so it's a loaded fries, kind of like a nachos or a poutine fries with all the toppings.
WHAT'S THE BEST PART OF BEING A FOOD TRUCK OPERATOR?
We love serving people and seeing a smile on their face when they eat some good food. That's what it's all about. That's why we keep doing it. You have those days where you're like, "Oh, I want to quit." But then you look at those smiles and it reminds me why I do it.
WHAT HAS BEEN YOUR EXPERIENCE WITH JOULE CASE AND YOUR NEW BATTERY SYSTEM?
It's a lot more efficient. Even the setup is a lot more efficient. It's quick and it's quiet at the same time. It's just better. It takes a lot of stress away from the setup and breakdown.
WHAT WAS THE INSPIRATION BEHIND YOUR TRUCK/MENU?
Theo's Gyros was inspired by the family name. That's my middle name, Theo. Which is Theodoros in Greek, and my dad's name is Theodore. We keep the name going and the recipes are inspired from Georgia's Greek Deli. That's the family restaurant.
WHAT ADVICE WOULD YOU GIVE TO ANOTHER FOOD TRUCK OWNER/OPERATOR?
I would advise them to make the steps if you can to purchase a Joule Case system. It's like I said before, a no brainer. It saves money and more efficient on the whole operation.
WHAT MADE YOU CHOOSE TO USE JOULE CASE AND A BATTERY SYSTEM TO POWER YOUR OPERATION?
I was really inspired by the design and how easy it is to operate. It's a no-brainer for food truck owners or any kind of mobile food business. It's the way to go. You save on maintenance and gas, and it's zero emissions.
